Have you ever had one of those German pancakes for breakfast? With apple filling? Had an amazing one in Colorado and was lucky enough to find the recipe for the pancake in a newspaper article. Had to wing it on the filling. Lets get started:
1/3 cup water 2 T. margarine 1/2 cup baking mix 2 eggs 2 apples 1 orange 1/3 cup sugar cinnamon 1/2 tsp cornstarch/1 tsp water
Preheat oven to 400 degrees. Generously grease/spray a 10″ cast iron skillet or 6 large muffin cups. Today I used muffin cups to make individual pancakes.
Heat water and margarine to boiling in 1 quart saucepan.
Add baking mix, all at once. Stir vigorously over low heat until mixture forms a ball. Remove from heat.
Beat in eggs, 1 at a time, continue beating until smooth.
Spread in skillet or divide evenly between 6 muffin cups. Do not spread up sides. Bake until puffed and dry in center. 20-25 minutes for skillet, 15 minutes for muffin tin.
While pancake is baking, peel and cut apple into chunks.
Add juice of orange and a little of the orange rind.
Add 1/3 cup sugar and cinnamon (to taste). Cook until apple is tender (wlll cook up tender in the 15 minutes the muffin size pancake is baking). Add cornstarch to 1 tsp water and thicken the apple mixture.
Remove pancake from oven when done. Isn’t that just beautiful!!!!!
Place pancakes in bowls, fill with apple/orange filling, dust with powdered sugar and enjoy!!
The summer projects have come to an end, the gardening, the canning, the weeding, sitting on the porch having breakfast (ahhhhhh) and I do miss that. But eating that home made jam and looking out on the snow in the winter months brings that summer sweetness all back. The garden tools have been put away and the leaves are in the compost bins getting ready to turn into next years flower garden compost. It is so amazing to put leaves and vegetable peelings, etc in the bin and then take out beautiful soil in the spring! (Keep busy little earthworms!) The fall and winter birds are visiting the feeder and scolding when the dog comes out and scatters them away to safety. Little do they know she would only like to visit and chat a little. She’s a very chatty dog but that’s a story for another day.
Well, today I felt like running. Sometimes things just go right (and just maybe its because I prayed first) and you run with it. I have a painting project started. The weather has turned cooler and summer has headed South so its time for indoor projects. I think they are right when they say artists are temperamental. It seems I have to be in the right mood to put paint on paper/cloth/wood/etc. This project is on wood. Four small pieces of furniture to be exact.
This is first of the paintings on the night stand. I’ll update you when the others are finished. My theme is the nativity. I love the Christmas story and it seems to get lost in the hustle and bustle of our commercialized world.

Sometimes it feels better to just not move at all. Life doesn’t always need change.
I went out and weeded more of the garden this morning while it was still cool. I love this time of year, so many flowers blooming and the promise of more. I look around and wonder how amazing it must have been when God created all this. Man could never have imagined all this beauty and variety.
My herb garden is doing good, it’s so nice to grow something and then use it in the kitchen. I think a pizza on the grill with fresh basil and tomatoes would be perfect.
The PH came home early from golf today and decided to mow the lawn. (PH stands for perfect husband, I’m a lucky girl) Love the smell of new mown grass. Did you know,according to some study, that great smell from the grass can relieve stress and boost memory? lol Someone is always telling us what’s good for us. It’s exercise and makes the yard look good!

Well here I am, not sure where this is going to go. Just a place to dump my thoughts and ramble on about whatever. I am so excited about life these days, God has blessed me with so many things.
